Broccoli Carrot Fennel Salad

SERVES 2 HUNGRY PEOPLE

INGREDIENTS:
1 Small Head of Broccoli, cleaned and sliced thin
2 Carrots, matchstick style cut
1-10 oz. Bag Peas
1 Bulb Fresh Fennel, matchstick style cut
¼ Cup Water

1. To very quickly cut the matchstick style vegetables, use a V-slicer, a King Kutter or a food processor.

2. Place broccoli, carrots, fennel and water into large whistle skillet with lid vent open. As soon as it starts to steam or at the very beginning of a whistle, remove it from heat.

3. Add peas and place lid back on until done

Recommended:
Use the Garlic Almond Dressing over this dish.

Dandelion Dressing

INGREDIENTS:
1 Lime, juiced
1 tsp. Agave Nectar
1/8 tsp. Sweet Leaf Stevia Plus
2 Tbsp. Salute Sante Lemon Grapeseed Oil
1 Egg, beaten well
1. Warm the oil, lime juice, Agave and Stevia until well blended.

2. Add 1 beaten egg and stir with spatula over low heat until it starts to thicken to sauce consistency.

Recommended:
Pour over cleaned and chopped dandelions. Serve with boiled yellow (Yukon Gold) potatoes.

Dandelion Salad

INGREDIENTS:
2 - 3 Cups Dandelion, cleaned chopped
1 - 2 Cups Celery, chopped
1 Bag of Baby Greens, cleaned
1.Combine dandelions, celery and baby greens together and enjoy.

Papaya Seed Dressing

INGREDIENTS:
4 Tbsp. Fresh Papaya Seeds
1 Tbsp. Agave or Lakanta
1 Tbsp. Balsamic Vinegar
2 ½ Tbsp. Fresh Lime Juice
¼ Cup Salute Sante Grapeseed Oil
1 Cup Salute Sante Grapeseed Oil
1 Tbsp. Fresh Rosemary Leaves, finely chopped

Seeding a Papaya:
Peel and half a fresh ripe Papaya. Scoop the seeds out. Measure out 4 tablespoons of papaya seeds. Slice the papaya into ¼ to ½ inch slices and cut in bite size pieces for Salad or freeze in hunks for the Papaya, ginger, vanilla, coconut smoothie. Friends from the Islands have told me that papaya seeds are full of enzymes and aid in minimizing parasite population.

1. In a Vita Mix Blender place the papaya seeds, Agave or lakanta, balsamic vinegar, and lime juice with the 1/4 cup of grapeseed oil.
2. Blend on High for a few seconds until blended. Lower the speed to #5 and slowly drizzle the 1 cup of grapeseed oil into mixture.
3. When finished add the Rosemary leaves.
4. Serve over salad of your choice.

Papaya Salad

INGREDIENTS:
2 Cups Papaya, cut in bite size pieces
3 Small to Medium Stalks Celery, cut into small bite size pieces
3 Tbsp Fresh Cilantro, finely chopped
1 Tbsp Fresh Tarragon, finely chopped

1. Toss all ingredients together. Spoon the desired amount of dressing over the salad. Enjoy!
